Description

A wholesome and delicious Blackberry Oatmeal Bake that’s perfect for a nutritious breakfast or snack. This baked oatmeal is loaded with fresh blackberries, rolled oats, and a hint of cinnamon, offering a comforting and naturally sweet meal that can be enjoyed warm or cold. With optional add-ins like shredded coconut, sliced almonds, and chia seeds, it provides a delightful texture and boost of nutrients. Easily customizable with your choice of milk and sweetener, this recipe is simple to prepare and great for meal prep.

Ingredients

Base Ingredients

  • 2 teaspoons coconut oil (avocado oil, or oil spray would also work)
  • 2 cups old-fashioned oats (aka rolled oats)
  • ½ teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon Kosher salt

Add-Ins (Optional)

  • ½ cup unsweetened toasted shredded coconut (optional)
  • ½ cup sliced almonds (optional)
  • 1 tablespoon chia seeds (optional)

Wet Ingredients

  • 2 large eggs (or flax eggs for a vegan option)
  • 2 cups unsweetened almond milk (or any milk you prefer)
  • 1 teaspoon vanilla extract
  • ⅓ cup maple syrup (plus more for drizzle)
  • 1 teaspoon lemon zest (optional)

Fruit

  • 2 cups fresh blackberries (divided, reserving ½ cup for garnish)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350 degrees F. Lightly coat an 8×8 inch square baking dish with coconut oil and set it aside to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, ground cinnamon, optional shredded coconut, sliced almonds, chia seeds, baking powder, and Kosher salt. Stir these dry ingredients until evenly mixed.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the eggs (or flax eggs), almond milk, vanilla extract, maple syrup, and optional lemon zest until thoroughly combined, ensuring a smooth liquid mixture.
  4. Combine Wet and Dry: Pour the wet mixture into the bowl of dry ingredients, stirring gently to fully incorporate all components without overmixing.
  5. Add Blackberries: Gently fold in 1½ cups of the fresh blackberries, taking care not to break the berries too much to retain their shape and freshness.
  6. Fill Baking Dish: Transfer the oatmeal mixture into the prepared baking dish, spreading it out evenly with a spatula for uniform baking.
  7. Bake: Place the dish in the preheated oven and bake for 35 to 40 minutes, or until the top turns golden brown and the bake is set in the center.
  8. Cool: Remove the bake from the oven and allow it to cool for about 10 minutes to firm up slightly and make serving easier.
  9. Serve and Garnish: Slice or scoop the bake into bowls. Garnish with the reserved ½ cup of fresh blackberries and drizzle with additional maple syrup if desired, then enjoy.

Notes

  • This recipe can be made vegan by substituting the eggs with flax eggs (1 tablespoon ground flaxseed mixed with 3 tablespoons water per egg).
  • Use any milk of your choice depending on dietary preference—dairy, almond, oat, or soy milk all work well.
  • For added texture and nutrition, the shredded coconut, almonds, and chia seeds are optional but recommended.
  • The bake can be stored covered in the refrigerator for up to 4 days and is easily reheated in the microwave.
  • Feel free to substitute blackberries with other berries or fruit of your choice.
  • Adjust the maple syrup amount to your desired sweetness.
