  • 1/2 large jalapeño, cut in chunks
  • 1/4 cup red onion, cut in chunks
  • 1 clove garlic, peeled

  • 1/2 large lime, freshly squeezed
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste


Instructions

  1. Add Ingredients to Blender: Place the fire-roasted tomatoes, chopped red onion, jalapeño chunks, peeled garlic clove, loosely packed cilantro, freshly squeezed lime juice, kosher salt, and freshly ground black pepper into a large blender or food processor. Make sure to give the vegetables a rough chop before adding to help blend evenly.
  2. Blend: Pulse the ingredients in short bursts for just a few seconds at a time. Avoid over-blending to retain some texture in the salsa, ensuring it’s chunky and fresh rather than smooth.
  3. Transfer to Container: Pour the blended salsa into mason jars or an airtight container ready for storage.
  4. Store: Refrigerate the salsa until ready to serve, allowing the flavors to meld together for optimal taste.
