- Whisk wet ingredients: In a large mixing bowl, combine the mashed bananas, egg, maple syrup, and sour cream. Microwave the coconut oil for about 10 seconds until melted, then add it along with the vanilla extract to the bowl. Mix all the ingredients thoroughly to combine. Optionally, you can add lemon zest for extra brightness.
- Add dry ingredients: Sprinkle the baking soda, ground cinnamon, salt, and whole wheat flour over the wet ingredients. Stir gently just until combined; avoid overmixing to keep the batter slightly lumpy and ensure a tender crumb.
- Add blueberries: Gently fold in the fresh blueberries to distribute them evenly without breaking them apart.
