Ingredients
Crust
- 2 cups graham crackers, crushed
- ½ cup unsalted butter, melted
Filling
- 1 8-ounce block cream cheese, softened to room temperature
- ½ cup confectioners sugar
- 1 teaspoon vanilla extract
- 16 ounces whipped topping, divided
- 2 21-ounce cans blueberry pie filling
- ⅓ cup chopped pecans
Instructions
- Preheat and prepare dish: Preheat your oven to 350℉ and grease a 9×13 inch baking dish to prevent sticking.
- Crush graham crackers: Either use a food processor to crush the graham crackers or place them in a plastic Ziploc bag and crush them with a rolling pin until finely ground.
- Make crust mixture: In a large mixing bowl, combine the crushed graham crackers with the melted unsalted butter, stirring until the mixture is evenly moistened.
- Form and bake crust: Press the crust mixture firmly and evenly into the bottom of the prepared 9×13 baking dish using your hands or the back of a spatula. Bake the crust for 7 minutes until slightly golden.
- Cool crust: Remove the crust from the oven and allow it to cool completely before proceeding to the next step to prevent melting the filling.
- Prepare cream cheese layer: In a large bowl, beat the softened cream cheese, confectioners sugar, and vanilla extract together with a mixer until smooth. Fold in half of the whipped topping carefully until fully incorporated and creamy.
- Assemble cream cheese layer: Spread the cream cheese and whipped topping mixture evenly over the cooled graham cracker crust with a spatula.
- Add blueberry pie filling: Pour the blueberry pie filling evenly over the cream cheese layer and gently spread it to cover thoroughly.
- Top with remaining whipped topping: Spread the remaining whipped topping evenly over the blueberry pie filling layer to create a smooth top layer.
- Garnish: Sprinkle the chopped pecans evenly across the top of the whipped topping for added crunch and flavor.
- Chill and serve: Refrigerate the assembled dessert for at least 1 to 2 hours, or preferably overnight, to allow it to set fully. Slice into servings and enjoy your Blueberry Delight.
Notes
- Ensure the cream cheese is softened to room temperature for easier mixing and a smoother filling.
- The crust can be baked a little longer for a crunchier texture if desired.
- Chilling overnight improves the flavor and texture by allowing layers to meld.
- For variation, try different nut toppings such as sliced almonds or walnuts.
- This dessert is best served chilled to maintain its structure and refreshing taste.
