Description

Blueberry Delight is a luscious no-bake dessert featuring a crunchy graham cracker crust, a creamy layer of sweetened cream cheese and whipped topping, topped with vibrant blueberry pie filling and garnished with chopped pecans. Perfectly chilled before serving, this dessert offers a refreshing balance of textures and flavors that make it ideal for any occasion.

Ingredients

Crust

  • 2 cups graham crackers, crushed
  • ½ cup unsalted butter, melted

Filling

  • 1 8-ounce block cream cheese, softened to room temperature
  • ½ cup confectioners sugar
  • 1 teaspoon vanilla extract
  • 16 ounces whipped topping, divided
  • 2 21-ounce cans blueberry pie filling
  • ⅓ cup chopped pecans

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350℉ and grease a 9×13 inch baking dish to prevent sticking.
  2. Crush graham crackers: Either use a food processor to crush the graham crackers or place them in a plastic Ziploc bag and crush them with a rolling pin until finely ground.
  3. Make crust mixture: In a large mixing bowl, combine the crushed graham crackers with the melted unsalted butter, stirring until the mixture is evenly moistened.
  4. Form and bake crust: Press the crust mixture firmly and evenly into the bottom of the prepared 9×13 baking dish using your hands or the back of a spatula. Bake the crust for 7 minutes until slightly golden.
  5. Cool crust: Remove the crust from the oven and allow it to cool completely before proceeding to the next step to prevent melting the filling.
  6. Prepare cream cheese layer: In a large bowl, beat the softened cream cheese, confectioners sugar, and vanilla extract together with a mixer until smooth. Fold in half of the whipped topping carefully until fully incorporated and creamy.
  7. Assemble cream cheese layer: Spread the cream cheese and whipped topping mixture evenly over the cooled graham cracker crust with a spatula.
  8. Add blueberry pie filling: Pour the blueberry pie filling evenly over the cream cheese layer and gently spread it to cover thoroughly.
  9. Top with remaining whipped topping: Spread the remaining whipped topping evenly over the blueberry pie filling layer to create a smooth top layer.
  10. Garnish: Sprinkle the chopped pecans evenly across the top of the whipped topping for added crunch and flavor.
  11. Chill and serve: Refrigerate the assembled dessert for at least 1 to 2 hours, or preferably overnight, to allow it to set fully. Slice into servings and enjoy your Blueberry Delight.

Notes

  • Ensure the cream cheese is softened to room temperature for easier mixing and a smoother filling.
  • The crust can be baked a little longer for a crunchier texture if desired.
  • Chilling overnight improves the flavor and texture by allowing layers to meld.
  • For variation, try different nut toppings such as sliced almonds or walnuts.
  • This dessert is best served chilled to maintain its structure and refreshing taste.
