Description

A fresh, vibrant Blueberry Tomato Caprese salad combining juicy cherry tomatoes, sweet blueberries, creamy fresh mozzarella, and fragrant basil, all drizzled with balsamic vinegar and extra-virgin olive oil. This quick and easy no-cook salad makes a perfect light appetizer or side dish, bursting with summer flavors and colorful presentation.

Ingredients

Produce

  • 2 Pints cherry tomatoes, fresh, sliced in half
  • 1 Pint blueberries, fresh
  • ⅓ Cup fresh basil leaves

Dairy

  • 8 Ounces fresh mozzarella pearls, drained

Condiments & Seasonings

  • 2 ½ Tablespoons balsamic vinegar
  • 2 ½ Tablespoons extra-virgin olive oil
  • Salt, to taste (optional)
  • Black pepper, to taste (optional)

Instructions

  1. Prepare the produce: Rinse the cherry tomatoes and blueberries thoroughly under cold water. Slice the cherry tomatoes in half carefully and drain the mozzarella pearls from their liquid.
  2. Combine ingredients: In a large mixing bowl, add the halved cherry tomatoes, fresh blueberries, fresh mozzarella pearls, and torn or whole basil leaves.
  3. Add dressing: Drizzle the balsamic vinegar and extra-virgin olive oil evenly over the ingredients in the bowl to ensure a balanced flavor coating.
  4. Season and toss: Grind salt and black pepper over the salad as desired. Gently toss all ingredients together to combine without breaking the mozzarella pearls or bruising the basil.
  5. Serve or chill: Serve the salad immediately to enjoy the freshest flavors, or cover and refrigerate until ready to serve. Best consumed within a few hours for optimal freshness.

Notes

  • Use fresh, ripe ingredients for the best flavor contrast between sweet blueberries and tangy tomatoes.
  • You can substitute fresh mozzarella pearls with small mozzarella balls called bocconcini if preferred.
  • This salad is best served fresh but can be chilled for up to 2 hours in the refrigerator.
  • Optionally, add a sprinkle of toasted pine nuts or a dash of crushed red pepper for an extra flavor dimension.
