Chicken Sausage Patties

  • 1 pound chicken breasts (or 1 pound ground chicken)
  • 3 tablespoons pure maple syrup

  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon garlic powder
  • Pinch of red pepper flakes (adjust to taste)


Instructions

  1. Prepare ground chicken: Add the chicken breast to a food processor and blend until it resembles ground chicken. Alternatively, use pre-ground chicken.
  2. Mix seasoning: In a small bowl, combine the maple syrup, olive oil, salt, paprika, poultry seasoning, ground sage, garlic powder, and red pepper flakes.
  3. Combine ingredients: Add the seasoning mixture to the ground chicken and pulse in the food processor again to evenly incorporate all the flavors.
  4. Form patties: Divide the mixture into 12 equal-sized balls and place them on a large plate.
  5. Preheat pan: Heat a large frying pan over medium-high heat and lightly grease it with cooking spray or a bit of oil.
  6. Cook patties: Add 6 balls to the pan at a time, pressing them down with wet fingers to form thin patties. Cook for 2-3 minutes on one side, then flip and cook for another 2-3 minutes until the internal temperature reaches 165°F (74°C).
  7. Repeat and serve: Repeat the cooking process with the remaining patties. Serve warm, or store in the fridge or freezer for later use.
