Ingredients
Crust and Seasoning
- 1 can prepared pizza crust
- 2 tablespoons olive oil, divided
- ½ teaspoon dried basil
Egg Mixture
- 6 eggs
- 3 tablespoons milk
- Salt and black pepper, to taste
Toppings
- 8 ounces ground pork sausage, cooked and drained, or ¼ cup cooked and crumbled bacon
- 3 green onions, sliced and divided
- ¼ cup finely diced red bell pepper
- 8 ounces Cabot Pepper Jack Cheese, shredded
- 2 ounces Cabot Extra Sharp Cheddar Cheese, shredded
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) to prepare for baking the pizza crust and toppings.
- Prepare and Bake the Crust: Grease a 10×15-inch rimmed baking sheet with 1 tablespoon of olive oil. Press the prepared pizza crust evenly onto the pan. Brush the top of the dough with the remaining 1 tablespoon of olive oil and sprinkle with dried basil. Bake the crust for 7 to 8 minutes, or until it is lightly browned.
- Cook the Eggs: While the crust bakes, whisk together the eggs, milk, salt, and black pepper until combined. Heat a lightly oiled skillet over medium heat, then add the egg mixture. Cook just until set, about 3 to 4 minutes, leaving the eggs slightly glossy and a bit undercooked, as they will finish cooking in the oven.
- Assemble the Pizza: Remove the partially baked crust from the oven. Spread the cooked eggs evenly over the crust. Top with the cooked ground sausage or bacon, half of the sliced green onions, and diced red bell pepper. Then sprinkle the shredded Pepper Jack and Extra Sharp Cheddar cheeses evenly over the top.
- Bake and Melt Cheese: Return the pizza to the oven and bake for an additional 8 to 10 minutes, or until the cheese is fully melted. If you desire a browned, bubbly cheese topping, broil the pizza for 1 to 2 minutes at the end, watching carefully to avoid burning.
- Finish and Serve: Remove the pizza from the oven and sprinkle with the remaining green onions and optional fresh parsley. Allow the pizza to rest for 2 to 3 minutes before slicing and serving to let the flavors set and the cheese firm up slightly.
