Description

Indulge in delicious Brookie Cheesecake Cups that combine the best of brownies, cookies, and creamy cheesecake in one bite-sized treat. These easy-to-make cups feature a chocolate chip cookie base, a smooth cream cheese layer, and a rich brownie topping, baked together in a jumbo muffin pan for perfect individual servings.

Ingredients

Cookie Layer

  • 1 tube refrigerated chocolate chip cookie dough (about 16 oz)

Cheesecake Layer

  • 8 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 1 egg

Brownie Layer

  • 1 brownie box mix (standard 18.3 oz size)
  • 2 eggs
  • ½ cup vegetable oil
  • 2 tablespoons water

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it’s ready for baking the brookie cheesecake cups.
  2. Prepare Pan: Grease a jumbo muffin pan using baking spray or by wiping it with oil, butter, or shortening to prevent sticking.
  3. Make Cheesecake Filling: In a small mixing bowl, beat the softened cream cheese with a hand mixer until smooth. Add the sugar and one egg and beat again until fully combined. Set aside.
  4. Prepare Brownie Batter: In a larger bowl, combine the brownie mix, two eggs, vegetable oil, and water. Stir with a spoon or whisk until smooth and well mixed. Set aside.
  5. Shape Cookie Dough: Take about ¼ cup of refrigerated chocolate chip cookie dough for each muffin cup. Press and mold the cookie dough inside each well, covering all sides to form a cookie crust. Add more dough if necessary.
  6. Add Cheesecake Layer: Spoon about 3 tablespoons of the cream cheese mixture into each cookie-lined muffin cup, spreading evenly.
  7. Pour Brownie Batter: Pour the prepared brownie batter over the cheesecake layer in each cup, filling the cups all the way to the top.
  8. Bake: Place the muffin pan in the preheated oven and bake for 30 to 45 minutes. Check for doneness by inserting a toothpick into the brownie layer; it should come out with a few moist crumbs but not wet batter.
  9. Cool and Remove: Remove the pan from the oven and allow the brookie cheesecake cups to cool completely. Once cooled, invert the pan over a cooling rack or serving platter and gently tap to release each cup.
  10. Serve and Garnish: Top each brookie cheesecake cup with your favorite toppings like ice cream, chocolate syrup, or whipped cream as desired before serving.

Notes

  • Ensure the cream cheese is softened to make mixing easier and achieve a smooth cheesecake filling.
  • The baking time may vary depending on your oven; check doneness with a toothpick after 30 minutes to avoid overbaking.
  • Use jumbo muffin pans for the best results in size and cooking time. Standard muffin pans will make smaller treats requiring adjusted baking time.
  • Feel free to customize toppings with nuts, caramel sauce, or fresh berries for extra flavor and texture.
  • Let the brookie cups cool completely before removing from the pan to prevent breaking or crumbling.
