Brownie Layer

  • 1/2 cup unsalted butter, melted

  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup + 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt

Cookie Dough Layer

  • 4 tablespoons unsalted butter, slightly melted
  • 2 tablespoons granulated sugar
  • 4 tablespoons brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2/3 cup + 2 tablespoons all-purpose flour
  • 2/3 cup semi-sweet chocolate chips

Assembly

  • 2 to 2 1/2 cups cookie dough ice cream, softened


Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving enough overhang on the edges to easily lift the baked bars out later.
  2. Make the brownie batter: Melt the butter together with 1/4 cup semi-sweet chocolate chips in a bowl. Whisk in the granulated sugar until fully combined. Add the vanilla extract and eggs, whisking them in until smooth. Stir in the flour, cocoa powder, and salt until just combined. Evenly spread the brownie batter in the prepared pan.
  3. Prepare the cookie dough: In another bowl, whisk together the slightly melted butter with granulated sugar and brown sugar. Add in the egg and vanilla extract, mixing until well combined. Stir in the salt, baking soda, and the all-purpose flour until a dough forms; it may seem thick but continue stirring. Fold in the semi-sweet chocolate chips.
  4. Add cookie dough to brownie layer and bake: Dollop spoonfuls of the cookie dough over the brownie batter. Press down gently on the dollops to form a cookie-like shape. Bake in the preheated oven for 15-18 minutes, until the cookie edges are set and golden brown but not overdone. Remove from oven and allow to cool completely.
  5. Soften the ice cream: About 10-15 minutes before assembling, remove the cookie dough ice cream from the freezer to soften slightly so it’s easier to spread but not melted.
  6. Slice the brookies: Lift the cooled brookies out of the pan using the parchment paper. Place on a cutting board and cut down the middle to form two equal halves. Flip one half over so the top is facing down, then place it back in the pan, bottom side up.
  7. Assemble the sandwiches: Dollop the softened ice cream evenly over the brookies in the pan. Spread gently to form an even layer, pressing down lightly to fill any gaps. Place the second half of the brookies on top, right side up, forming a sandwich.
  8. Freeze the assembled sandwiches: Place the layered pan in the freezer for at least 4 hours or preferably longer until the ice cream is frozen solid.
  9. Cut and serve: Once frozen solid, use a biscuit cutter for round sandwiches or a sharp chef’s knife for square bars to cut the ice cream sandwiches into desired sizes. Serve immediately or store frozen until ready to enjoy.
