Ingredients

Roasted Butternut Squash

Ravioli

  • 18-20 ounces ravioli (any kind)

  • Juice of 1/2 lemon (plus lemon wedges from the other half for serving)
  • 1/2 cup white wine or low-sodium chicken broth

Instructions

  1. Preheat and Roast Squash: Preheat your oven to 425°F and line a large rimmed baking sheet with parchment paper.   2. Cook Ravioli: While the squash roasts, bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions until tender. Drain and set aside.
  3. Make Brown Butter Sage Sauce: In a large skillet over medium-high heat, melt the unsalted butter. Once melted, add the fresh sage leaves. Let the butter brown and bubble for 2-3 minutes, releasing a warm, nutty aroma. Remove the sage leaves and place them on a paper towel-lined plate, leaving the browned butter in the skillet.
