- 1 19-oz can black beans (scant 2 cups after rinsing; drained and rinsed)

- ⅓ cup unsweetened cocoa powder
- 1 tsp instant espresso powder
- ½ tsp baking powder
- ¼ tsp salt
Wet Ingredients
- 2 large eggs
- ½ cup maple syrup
- ¼ cup avocado oil
- 2 tsp vanilla extract

- 3 Tbsp mini semi-sweet chocolate chips
Instructions
- Preheat Oven and Prepare Pan: Position your oven rack to the middle and preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with liners and set aside.
- Combine Ingredients: Add all ingredients except the chocolate chips into a blender.
- Blend Batter: Blend on high until the mixture is completely smooth, pulsing or scraping down the sides as needed. This process should take about 60 seconds.
- Fill Muffin Cups: Transfer the batter into the prepared muffin pan, filling each cup about halfway. Sprinkle each muffin with mini semi-sweet chocolate chips as a topping, if desired.
- Bake Muffins: Bake in the preheated oven for 16-20 minutes or until the brownies are set and lightly cracked on top. Avoid over-baking to prevent dryness.
- Cool Muffins: Let the muffins rest in the pan for 5 minutes before transferring them to a wire rack to cool completely.
