Description

These Brownie Black Bean Muffins are a delicious and healthier twist on traditional brownies. Ingredients

Dry Ingredients

  • 1 19-oz can black beans (scant 2 cups after rinsing; drained and rinsed)
  • ½ cup quick oats (use gluten-free if needed)
  • ⅓ cup unsweetened cocoa powder
  • 1 tsp instant espresso powder
  • ½ tsp baking powder
  • ¼ tsp salt

Wet Ingredients

  • 2 large eggs
  • ½ cup maple syrup
  • ¼ cup avocado oil
  • 2 tsp vanilla extract

Toppings

  • 3 Tbsp mini semi-sweet chocolate chips


Instructions

  1. Preheat Oven and Prepare Pan: Position your oven rack to the middle and preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with liners and set aside.
  2. Combine Ingredients: Add all ingredients except the chocolate chips into a blender.
  3. Blend Batter: Blend on high until the mixture is completely smooth, pulsing or scraping down the sides as needed. This process should take about 60 seconds.
  4. Fill Muffin Cups: Transfer the batter into the prepared muffin pan, filling each cup about halfway. Sprinkle each muffin with mini semi-sweet chocolate chips as a topping, if desired.
  5. Bake Muffins: Bake in the preheated oven for 16-20 minutes or until the brownies are set and lightly cracked on top. Avoid over-baking to prevent dryness.
  6. Cool Muffins: Let the muffins rest in the pan for 5 minutes before transferring them to a wire rack to cool completely.
