Description

These Brownie Cool Whip Cookies are a quick and easy treat that combines the fudgy richness of brownie mix with the light, fluffy texture of Cool Whip. With just a few simple ingredients and minimal prep time, they bake up soft, chewy, and irresistibly delicious – perfect for satisfying your chocolate cravings in under 30 minutes.

Ingredients

Ingredients

  • 1 box brownie mix (we used Duncan Hines Chewy Fudge Brownie Mix)
  • 8 ounces Cool Whip
  • 1 egg
  • ½ cup powdered sugar

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a sheet pan with parchment paper to prevent the cookies from sticking and to ensure even baking.
  2. Combine Ingredients: In a large mixing bowl, add the brownie mix, Cool Whip, and egg. Gently mix the ingredients just until they are combined to form the cookie dough, taking care not to over mix.
  3. Coat Dough in Sugar: Scoop portions of the cookie dough into a small bowl filled with powdered sugar. Roll each scoop to coat thoroughly in powdered sugar before placing them on the prepared sheet pan, leaving about 2 inches of space between cookies to allow for spreading.
  4. Bake Cookies: Bake the cookies in the preheated oven for 15-17 minutes. The cookies are done when the edges are firm to the touch but the centers remain soft and chewy.
  5. Cool Cookies: Remove the cookies from the oven and allow them to cool completely on the sheet pan before serving to let them set properly.

Notes

  • Do not over mix the dough to maintain a tender texture.
  • Coating the dough in powdered sugar helps create a beautiful crackled top and a sweet outer layer.
  • Allow cookies to cool fully on the baking sheet as they are delicate when warm.
  • You can use any boxed brownie mix, but fudgy varieties work best for this recipe.
  • Store baked cookies in an airtight container at room temperature for up to 3 days.
