Delicious and nutritious Brownie Energy Bites that combine the rich flavors of chocolate and peanut butter for a healthy snack option. These no-bake bites are quick to prepare and perfect for an energy boost any time of day.
Ingredients
Dry Ingredients
- ¼ cup mini chocolate chips
- ½ cup oat flour
- ¼ cup cocoa powder
- ¼ cup chocolate protein powder
- dash of salt (optional)
Wet Ingredients
- ½ cup creamy peanut butter
- 1 Tbsp maple syrup
- 1-2 tsp vanilla extract
- 2 Tbsp coconut oil
- 1-2 Tbsp water
Instructions
- Prep Ingredients: Measure and prepare all ingredients so that everything is ready for mixing.
- Combine Ingredients: Place all dry and wet ingredients into a large mixing bowl.
- Mix Dough: Using a spatula or your hands, mix the ingredients thoroughly until a pliable, firm, dough-like consistency is achieved. If too dry to roll into balls, gradually add water or maple syrup 1 tablespoon at a time and mix well.
- Adjust Consistency: If the mixture is too soft and doesn’t hold shape, add oat flour 1 tablespoon at a time and mix well until firm enough to roll.
- Form Bites: Take tablespoon-sized pieces of dough and roll them tightly into even balls using your palms or an ice cream scoop for uniformity.
- Chill: Place the rolled energy bites onto a parchment-lined sheet and chill in the refrigerator for 10 minutes to set.
- Store: Transfer the chilled energy bites into an airtight container and store in the fridge for freshness.
Notes
- Adjust water and oat flour amounts based on dough consistency to ensure easy rolling.
- Maple syrup adds sweetness; adjust according to taste preference or dietary needs.
- Store bites in an airtight container to maintain freshness up to one week in the refrigerator.
- These bites are perfect for a quick on-the-go snack or post-workout energy boost.
