Description

Ingredients

Brownie Base

  • 1 batch of brownies (8×8” or 9×9” pan size)
  • 4 oz cream cheese (room temperature)

Chocolate Coating

  • 2 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil


Instructions

  1. Prepare Brownie Mixture: Roughly chop the cooled brownies and place them in a stand mixer fitted with the paddle attachment. Break them down on low speed. Add in the room temperature cream cheese and mix again until fully combined, forming a dense, pliable brownie mass.
  2. Shape the Truffles: Using a 1 tablespoon cookie scoop, scoop out the brownie mixture and roll each portion between your hands until a smooth ball forms. Place each ball onto a parchment-lined sheet pan. Alternatively, press the brownie mixture into a brick shape between parchment paper and use cookie cutters to create specific shapes.
  3. Freeze: Freeze the shaped truffles until firm while preparing the chocolate coating to ensure easy handling and a crisp chocolate shell.
  4. Melt Chocolate: Set a mixing bowl over a saucepan with about 1 inch of simmering water (double boiler). Add the chocolate chips and coconut oil to the bowl. Allow the chocolate to melt slowly, stirring occasionally until completely smooth and glossy.
  5. Dip Truffles: Using a chocolate dipping tool or two forks, dip each frozen truffle into the melted chocolate. Roll to coat fully and let the excess chocolate drip off. Transfer the coated truffles back onto the parchment-lined sheet pan.
