Ingredients

Base

  • 1⅓ cup almond flour
  • 1 cup peanut butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract

Topping

  • 1 cup chocolate chips or melts
  • 2 Tbsp peanut butter
  • 1 tsp coconut oil
  • ¼ tsp coarse sea salt (for topping)


Instructions

  1. Prepare the base: In a large bowl, combine the almond flour, 1 cup of peanut butter, maple syrup, and vanilla extract. Mix thoroughly, taking your time to ensure the peanut butter is well incorporated into the flour to form a consistent mixture.
  2. Shape and chill the base: Line an 8×6 inch bread loaf dish (or similar size) with parchment paper. Transfer the peanut butter mixture into the dish and press it down evenly with your hands. Place the dish in the freezer for 30 to 40 minutes to firm up.
  3. Melt the chocolate topping: While the base chills, combine the chocolate chips, 2 tablespoons of peanut butter, and coconut oil in a medium microwave-safe bowl. Microwave on medium heat for about 2 minutes, stirring after the first minute, until the chocolate is fully melted and smooth.
  4. Assemble the bars: Remove the peanut butter base from the freezer. Pour the melted chocolate mixture evenly over it and smooth the surface with a spoon or spatula. Sprinkle with the coarse sea salt on top. Place the dish in the fridge or freezer and chill for about 30 minutes until the chocolate hardens.
  5. Slice and store: Once the chocolate has set, take the bars out of the fridge or freezer. Lift them out using the parchment paper and let them sit at room temperature for about 5 minutes. Use a sharp knife to cut the bars into squares. Store the bars in an airtight container in the refrigerator for up to 7 days or freeze for up to 3 months.
