Ingredients
Vegetables
- 1 cup diced onion (120 grams)
- 2 cups shredded carrots (150 grams/2 medium-large)
Protein
- 3 cups shredded chicken (290 grams)
- 10 large eggs
Seasonings and Sauces
- 1 teaspoon garlic powder
- 1 teaspoon dried dill
- 1/4 cup + 2 tablespoons buffalo sauce (divided)
- salt and pepper, to taste
Other
- 1/2 tablespoon oil
- oil, for greasing
- optional toppings – avocado, hot sauce, green onions
Instructions
- Preheat and prepare dish: Preheat your oven to 350 degrees Fahrenheit and lightly grease a 7×11 inch baking dish or one of similar size to prevent sticking.
- Sauté vegetables: Heat a small to medium skillet over medium-low heat, add 1/2 tablespoon oil and allow it to warm. Add the diced onions, season with salt and pepper, and sauté for 2-3 minutes until softened. Then add the shredded carrots along with a touch more salt and pepper, cooking them for an additional 2-3 minutes. Remove the skillet from heat.
- Combine chicken and vegetables: In your greased casserole dish, add the sautéed carrot and onion mixture. Then add the shredded chicken, garlic powder, dried dill, 1/4 cup of buffalo sauce, and mix all together well to evenly distribute the flavors.
- Mix eggs and remaining sauce: In a large bowl, whisk together the 10 eggs with the remaining 2 tablespoons of buffalo sauce and a pinch of salt and pepper. Pour this egg mixture into the casserole dish over the chicken and vegetable mixture. Stir gently to combine everything evenly, ensuring the eggs are well incorporated. Optionally, drizzle a little more buffalo sauce on top for extra flavor.
- Bake the casserole: Place the casserole in the preheated oven and bake for 35-40 minutes, or until the eggs are fully cooked and set throughout.
- Serve and garnish: Remove from oven and allow to cool slightly. Top with optional avocado slices, green onions, or a dash of hot sauce if desired, then serve warm and enjoy your hearty buffalo chicken breakfast casserole.
