Buffalo Chicken Quesadillas are a quick and flavorful twist on the classic quesadilla, combining shredded chicken tossed in spicy buffalo wing sauce with creamy ranch dressing and melty cheddar and Monterey jack cheeses. Ingredients
For the Filling
- 1 tablespoon olive oil
- 1 yellow onion, finely diced
- ½ teaspoon salt
- 2 cloves garlic, minced
- 1 pound chicken breast, cooked and shredded
- ½ cup ranch dressing
- 3 tablespoons buffalo wing sauce
- 2 teaspoons fresh cilantro, chopped
- ½ teaspoon black pepper
- 1 tablespoon lime juice
For the Quesadillas
- 10 medium-sized tortillas
- 1 ½ cups cheddar cheese, shredded
- 1 ½ cups Monterey jack cheese, shredded

- Fresh chopped cilantro
- Ranch dressing or blue cheese dressing for dipping
Instructions
- Sauté Onion and Garlic: In a medium skillet, heat the olive oil over medium heat. Add the finely diced yellow onion and sauté for about 5 minutes until the onion is translucent and soft. Then add the minced garlic and salt and cook for an additional minute, stirring frequently until the garlic is fragrant.
- Prepare Buffalo Chicken Mixture: Remove the skillet from the heat. Add the cooked shredded chicken, buffalo wing sauce, ranch dressing, chopped cilantro, lime juice, and black pepper to the onion and garlic mixture. Mix well until all ingredients are thoroughly combined.
- Heat Skillet for Quesadillas: Heat a separate medium skillet over medium heat, ready for cooking the quesadillas.
- Assemble Quesadilla: Place one tortilla in the preheated skillet. On one half of the tortilla, add approximately 2 tablespoons of cheddar cheese and 2 tablespoons of Monterey jack cheese evenly spread. Then spoon the buffalo chicken mixture over the cheese side. Carefully fold the other half of the tortilla over the filling, creating a semicircle.
- Cook Quesadilla: Cook the folded quesadilla over medium heat until the bottom side is golden brown and the cheese begins to melt, about 2-3 minutes. Flip the quesadilla carefully and cook the other side until it is also golden brown and crispy.
- Serve: Remove from the skillet and serve warm. Optionally, top with sour cream and fresh chopped cilantro. Serve with ranch or blue cheese dressing for dipping.
