Ingredients

Caramelized Onions

  • 2 medium yellow onions, chopped in ¼ inch slices
  • ½ teaspoon salt

Dip Base

  • 2 cups sour cream
  • 2 cups cottage cheese
  • ¼ cup mayonnaise
  • 1 teaspoon soy sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon beef bouillon
  • ¼ teaspoon ground pepper

Garnish

  • 2 tablespoons finely chopped chives


Instructions

  1. Caramelize the Onions: In a heavy-bottomed frying pan, melt the butter over medium heat. Add the sliced onions and salt, cooking them for 15 minutes. Then reduce the heat and continue cooking for another 10-15 minutes, stirring frequently to prevent burning. The onions should turn a golden to dark brown color and develop a jammy texture. Remove from heat and allow to cool to at least room temperature. Once cooled, chop the onions into smaller pieces.
  2. Prepare the Dip Base: In a serving bowl, combine the sour cream, cottage cheese, mayonnaise, soy sauce, garlic powder, onion powder, beef bouillon, ground pepper, and half of the chopped chives. Stir the ingredients together until well blended.
  3. Combine and Chill: Fold the caramelized onions into the dip mixture evenly. Sprinkle the remaining chopped chives on top for garnish. Cover and chill the dip in the refrigerator for 2-3 hours to allow the flavors to meld and enhance.
  4. Serve: Serve the dip chilled alongside your favorite chips, crackers, or fresh vegetables for a delicious appetizer or snack.
