Ingredients
Meat Mixture
- 1 pound ground beef
- 1 cup white onion, diced
- 2 cloves garlic, minced
- 5 tablespoons ketchup
- 2 tablespoons mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Dough & Cheese
- 1 (16 ounce tube) jumbo biscuit dough (8 biscuits)
- 48 cubes American cheese (found in the deli)
Toppings
- 1 cup dill pickles, chopped
- 1/2 cup onion, diced
- 1 1/2 cup lettuce, shredded
Instructions
- Preheat and Prepare Tins: Preheat the oven to 375°F (190°C) and spray two muffin tins with nonstick cooking spray to prevent sticking.
- Form Biscuit Cups: Cut each biscuit in half on a cutting board. Press out the dough halves and firmly press each piece into the muffin tins, shaping them to form cups. Set aside.
- Cook Beef Mixture: Heat a large skillet over medium-high heat. Add ground beef and diced onions, cooking until the meat is browned and onions are softened. Add minced garlic and cook for another 30 seconds until fragrant, stirring continuously.
- Season Meat: Stir in ketchup, mustard, salt, and black pepper until well combined. Remove from heat.
- Assemble and Add First Cheese Layer: Place one cube of American cheese into each biscuit cup. Spoon approximately 2 tablespoons of the cooked meat mixture into each cup, gently pressing it down.
- Bake Initial Layer: Bake the filled biscuit cups in the preheated oven for 6-7 minutes to begin cooking the dough and melting the cheese.
- Add Second Cheese Layer and Continue Baking: Remove the cups from the oven and press another cheese cube on top of the meat mixture in each cup. Return to the oven and bake for an additional 7-8 minutes or until the biscuit dough is golden brown and fully cooked.
- Cool and Remove: Remove the cheeseburger cups from the oven and allow them to cool for 5 minutes. Carefully remove each cup from the muffin tins.
- Serve and Garnish: Top each cheeseburger cup with chopped dill pickles, diced onions, and shredded lettuce. Serve warm and enjoy!
Notes
- You can substitute American cheese cubes with cheddar or any cheese of your choice.
- Make sure to press the biscuit dough firmly to avoid leaking during baking.
- Use lean ground beef (around 80/20) for best flavor and moisture.
- These cups can be made ahead and reheated for convenience.
- Optional: add a slice of tomato or drizzle extra ketchup/mustard on top before serving.
