- 3 cloves garlic, minced
- 1/4 cup chopped parsley
- 1/4 cup chopped green onion
Potatoes
- 6 small-medium Yukon Gold potatoes, peeled and chopped (approx. 1200 grams or 2.5 pounds)
Dairy and Fats
- 1/4 cup butter
- 1/2 cup milk
- 7 ounces shredded cheddar cheese (200 grams or just over 2 cups)
Oils and Seasonings
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the broccoli and the casserole.
- Cook Potatoes: Place the chopped Yukon Gold potatoes into a large pot and cover with water. Bring to a boil, then reduce heat and simmer covered for about 15 minutes until potatoes are fork-tender.
- Roast Broccoli: Toss chopped broccoli florets with olive oil, salt, and pepper in a large casserole or baking dish. Spread in a single layer and bake in the preheated oven for 15 minutes. Remove from oven once roasted.
- Mash Potatoes: Drain the potatoes thoroughly then return them to the pot. Add butter, milk, minced garlic, salt, and pepper. Mash the mixture using a potato masher until creamy. Stir in chopped parsley and green onion, then taste and adjust seasoning as needed.
- Combine Casserole: Add the mashed potatoes to the baking dish with roasted broccoli. Mix everything together well along with half of the shredded cheddar cheese. Spread the mixture evenly in the dish, then sprinkle the remaining cheese on top.
- Bake Casserole: Return the casserole dish to the oven and bake for an additional 15-20 minutes until the cheese is melted and bubbly. Serve hot as a delicious side dish.
