Description

Crispy, golden Cheesy Smashed Potatoes feature tender boiled Yukon gold potatoes smashed and baked with a flavorful topping of melted mozzarella cheese, garlic, and herbs. Served with a dollop of sour cream and fresh chives, this dish makes a perfect comforting side or appetizer for any occasion.

Ingredients

Potatoes and Seasoning

  • 1 ½ lbs Yukon gold potatoes
  • 3 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper

Toppings and Garnish

  • 1 cup shredded mozzarella cheese
  • ½ cup sour cream (to serve)
  • Chopped chives (to garnish)

Instructions

  1. Preheat Oven and Prepare Baking Tray: Preheat your oven to 425°F (220°C) and lightly grease a 9×13 inch baking tray to prevent sticking during baking.
  2. Boil Potatoes: Place the Yukon gold potatoes in a pot of salted water and boil for 15-20 minutes until they are just tender when pierced with a fork. Then drain them thoroughly.
  3. Season Potatoes: Transfer the drained potatoes to a large bowl. Drizzle the olive oil over them, then sprinkle with garlic powder, salt, and pepper. Toss gently to coat all potatoes evenly with the seasoning.
  4. Smash Potatoes: Arrange the seasoned potatoes on the greased baking tray in a single layer. Use a fork or potato masher to gently press down and smash each potato until flattened but still in one piece.
  5. Add Cheese and Bake: Sprinkle the shredded mozzarella cheese evenly over the smashed potatoes. Place the tray in the preheated oven and bake for 15-20 minutes, or until the cheese is melted, bubbly, and the edges of the potatoes turn crispy golden brown.
  6. Garnish and Serve: Remove the baking tray from the oven. Garnish the cheesy smashed potatoes with freshly chopped chives and serve hot with a side of sour cream for dipping.

Notes

  • Use Yukon gold potatoes because they have a creamy texture that holds up well to boiling and smashing.
  • For extra flavor, try adding a sprinkle of smoked paprika or Parmesan cheese on top before baking.
  • You can make this dish ahead and reheat in the oven to keep the crispiness intact.
  • Serve with sour cream or your favorite dipping sauce for added creaminess.
  • Make sure to not over-smash the potatoes to keep some texture intact.
