  • 8 ounces ditalini pasta
  • 3 cups shredded cooked chicken

Instructions

  1. Sauté Aromatics: Heat olive oil in a Dutch oven over medium-high heat until shimmering. Add minced garlic and chopped onion, sautéing for 1-2 minutes until the onion softens and becomes fragrant.
  2. Add Tomatoes and Broth: Stir in the canned diced tomatoes (with their juice), 4 teaspoons of Italian seasoning, bay leaves, and chicken broth. Bring the mixture to a boil to combine the flavors.
  3. Cook Pasta: Add the ditalini pasta to the pot and bring the soup back to a boil. Then reduce the heat to medium-low and let it simmer gently for 10-15 minutes until the pasta is tender. Add the remaining 2 teaspoons of Italian seasoning and season with garlic salt and black pepper to taste.
