Description

Ingredients

Chipotle Mayonnaise

  • 1/2 cup mayonnaise
  • 3 canned chipotle peppers in adobo sauce (add more to taste)
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp chili powder

Sandwich

  • 2 cups cooked shredded chicken
  • 8 slices ciabatta bread or white bread
  • 1 1/2 ripe avocados
  • 1 cup shredded Colby Jack cheese
  • 4 Tbsp unsalted butter


Instructions

  1. Make Chipotle Mayonnaise: Add mayonnaise, chipotle peppers, salt, garlic powder, and chili powder to a food processor. Pulse on high speed several times until the mixture is smooth and creamy.
  2. Combine Chicken Mixture: Transfer the chipotle mayonnaise to a bowl with the cooked shredded chicken. Mix thoroughly until well combined.
  3. Assemble Sandwiches: Spread the chicken mixture evenly over half of the bread slices. Layer sliced avocado and shredded Colby Jack cheese on top.
  4. Top Bread: Place the remaining bread slices over the toppings, mayo side down, to close the sandwiches.
  5. Toast Sandwiches: Heat a pan over medium-high heat and add the butter. Once melted and hot, place sandwiches in the pan. Toast each side for 3-4 minutes, or until the bread is golden brown and the cheese has melted.
