Ingredients
Oatmeal Cookie Dough Layer
- ⅓ cup oat flour
- 3 Tbsp SunButter (creamy)
- 1 Tbsp honey
- 1 tsp vanilla extract
- 3 Tbsp chopped chocolate
- ⅛ tsp sea salt
Yogurt Layer
- ⅓ cup Greek yogurt
- 3 Tbsp SunButter (creamy)
- ½ Tbsp honey
- 1 tsp vanilla extract
Chocolate Coating & Topping
- 16 oz chocolate
- 2 ripe bananas, sliced into ¼ inch coins
- Coarse sea salt for sprinkling
Instructions
- Prepare the oatmeal cookie dough: In a small bowl, mix together the oat flour, SunButter, honey, vanilla extract, chopped chocolate, and sea salt until well combined. Set this mixture aside.
- Prepare the yogurt layer: In another bowl, combine the Greek yogurt, SunButter, honey, and vanilla extract, stirring until smooth and well blended. Set aside.
- Melt the chocolate: Using a double boiler over very low heat, gently melt the 16 oz of chocolate until smooth and fully melted. Remove from heat and set aside.
- Line the muffin tin: Place mini liners into a mini muffin tin to prepare for layering.
- Layer melted chocolate: Add about 1 teaspoon of the melted chocolate into the bottom of each mini liner to create the base layer.
- Add cookie dough layer: Scoop approximately 1 teaspoon of the cookie dough mixture into a ball, flatten it into a disk shape, and place it atop the melted chocolate in each liner.
- Add yogurt layer: Using a ½ tablespoon measuring spoon, dollop the prepared yogurt mixture evenly over the cookie dough layer in each mini liner.
- Place banana slices: Top each yogurt layer with a single banana coin slice to add freshness and flavor.
- Top with chocolate and sea salt: Spoon the remaining melted chocolate over the banana slices, filling each liner to the top. Sprinkle a pinch of coarse sea salt on each to enhance flavor.
- Chill to set: Place the filled muffin tin in the freezer for at least 30 minutes or until the chocolate is firm and the bites are fully set.
