Description

This easy and delicious Chocolate Bark recipe combines toasted almonds, shredded coconut, and dried cherries with rich dark chocolate, topped with a sprinkle of flaky sea salt. Ingredients

Dry Ingredients

  • 1/2 cup raw almonds (72 grams)
  • 1/3 cup shredded coconut (25 grams)
  • 1/2 cup dried cherries (80 grams)

Chocolate

  • 8 ounces dark chocolate (60 or 70% cacao recommended)


Instructions

  1. Toast your almonds. Heat a small skillet over medium-low heat. Add the raw almonds and toast for 3-5 minutes, stirring frequently until they start to brown and become fragrant. Remove immediately from heat to prevent burning.
  2. Toast your coconut. Using the same pan, reduce heat to low and add shredded coconut. Toast for 30-60 seconds, stirring frequently until lightly browned. Watch closely as it toasts quickly, then remove from heat.
  3. Prep your ingredients. Roughly chop the toasted almonds and dried cherries. If using a chocolate bar instead of chips, break it into equal-sized pieces to ensure even melting.
  4. Melt chocolate. Place chocolate in a medium microwave-safe bowl and microwave in 15-20 second intervals, stirring after each, until fully melted without burning. Alternatively, use a double boiler by placing a heatproof bowl over gently boiling water and stirring until melted.
  5. Mix your ingredients. Add most of the chopped almonds, cherries, and toasted coconut to the melted chocolate and mix thoroughly. Reserve a small amount of each ingredient for topping the bark.
  6. Make chocolate bark. Line a small baking sheet with parchment paper or a silicone mat. Pour the chocolate mixture evenly onto the sheet, spreading it to about 1/4 to 1/2 inch thickness. Sprinkle the reserved almonds, cherries, coconut, and flaky sea salt over the top.
  7. Let chill. Place the baking sheet in the refrigerator for 20-30 minutes to allow the chocolate to harden completely.
  8. Enjoy! Once hardened, break the chocolate bark into approximately 2-inch pieces and serve or store for later enjoyment.
