Ingredients
Popcorn Base
- 14 cups popped plain popcorn (approximately 1 cup unpopped)
Caramel Coating
- 14 ounce package of caramel candies (unwrapped)
- 4 tablespoons butter (softened)
Chocolate Coating and Decoration
- 12 ounce package of semi-sweet chocolate chips (melted)
- 10 popsicle sticks
- Sprinkles (for decorating)
Instructions
- Pop the popcorn: Prepare the popcorn according to the package directions until fully popped. Transfer the popped popcorn into a large mixing bowl and set aside for later use.
- Melt the caramel: In a medium saucepan over medium-low heat, combine the unwrapped caramel candies and softened butter. Stir continuously until the mixture melts completely and becomes smooth.
- Combine caramel with popcorn: Remove the caramel mixture from heat and pour it evenly over the bowl of popped popcorn. Gently stir to coat all the popcorn pieces thoroughly. Allow the mixture to cool for a couple of minutes to make it easier to handle.
- Melt the chocolate: While the popcorn cools, melt the semi-sweet chocolate chips. You can do this either in the microwave in short bursts, stirring often, or over a double boiler until chocolate is fully melted and smooth.
- Shape the popcorn balls: Lightly grease your hands with butter to prevent sticking. Shape the coated popcorn into balls roughly the size of a softball.
- Insert sticks and dip: Insert a popsicle stick into the center of each popcorn ball. Dip each ball into the melted chocolate to coat it, then immediately roll or sprinkle with decorative sprinkles to your liking.
