Description

Deliciously moist and flavorful Chocolate Chip Banana Bars made with ripe bananas, melted butter, and mini chocolate chips. Perfectly soft with a hint of vanilla, these bars are an easy-to-make treat that satisfies your sweet tooth and uses up those overripe bananas.

Ingredients

Wet Ingredients

  • ½ cup (106 g) butter, melted, (dairy free or regular)
  • 2 eggs
  • 2 cup (465 g) ripe mashed bananas (3-4 ripe bananas)
  • 1 teaspoon vanilla extract

Dry Ingredients

  • ¾ cup (150 g) granulated white sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cup (250 g) all-purpose flour

Add-ins

  • ½-¾ cup mini chocolate chips

Instructions

  1. Prepare the oven and pan: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper to prevent sticking.
  2. Melt butter and mix wet ingredients: Measure the butter and melt it in a microwave-safe bowl. Whisk in the eggs and vanilla extract until combined. Then whisk in the granulated white sugar thoroughly.
  3. Mash bananas and combine: Mash the ripe bananas with a fork until mostly smooth, removing any large clumps. Add the mashed bananas to the wet ingredient mixture and stir well to incorporate.
  4. Add dry ingredients: Whisk together the all-purpose flour, baking soda, and salt in a separate bowl, then gradually whisk or fold them into the wet banana mixture until just combined. Avoid overmixing to keep the bars tender.
  5. Incorporate chocolate chips: Gently fold in ½ to ¾ cup of mini chocolate chips into the batter evenly.
  6. Pour batter into pan: Transfer the batter into the prepared 9×13-inch baking pan and spread it evenly. Sprinkle additional mini chocolate chips on top if desired for extra chocolate goodness.
  7. Bake: Place the pan in the preheated oven and bake for 17 to 23 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs attached.
  8. Cool and serve: Remove the pan from the oven and allow the bars to cool for 5 to 10 minutes before slicing into 18 squares. Enjoy your moist and flavorful banana bars!

Notes

  • Use dairy-free butter and verify chocolate chips are dairy-free to make this recipe vegan-friendly.
  • For extra moisture and flavor, consider adding a handful of chopped nuts like walnuts or pecans.
  • Storage: Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Overripe bananas are best for flavor and sweetness in this recipe.
