Ingredients

Dry Ingredients

  • 2½ cups all-purpose flour
  • ⅓ cup light brown sugar (packed)
  • 2 tbsp instant espresso powder
  • ½ tsp salt
  • 2 tsp baking powder
  • ½ tsp baking soda

Butter and Chocolate

  • ½ cup unsalted butter (cold and cut into small pieces)
  • ¾ cup mini semi-sweet chocolate chips

Wet Ingredients for Dough

  • 1 cup heavy whipping cream (cold)
  • 1 tsp pure vanilla extract
  • 1 large egg (room temperature)

Egg Wash

  • 1 tbsp heavy whipping cream

Coffee Glaze

  • 1 cup powdered sugar (sifted)
  • 1 tsp instant espresso powder
  • 1 tbsp brewed coffee (or espresso)
  • 1 – 2 tbsp milk or cream (or water)


Instructions

  1. Combine dry ingredients: In a large bowl, mix together the all-purpose flour, light brown sugar, baking powder, baking soda, salt, and instant espresso powder until evenly combined.
  2. Cut in butter and add chocolate chips: Using a pastry cutter or two forks, cut the cold butter into the dry mixture until the texture resembles coarse crumbs. Then stir in the mini semi-sweet chocolate chips so they are well dispersed.
  3. Mix wet ingredients: Whisk the vanilla extract into the cold heavy whipping cream. Set aside.
  4. Combine wet and dry ingredients: Pour the whipped cream and vanilla mixture into the center of the flour-butter mixture in two parts. Gently mix just until a dough begins to form, taking care not to overwork the dough.
  5. Knead and shape dough: Transfer the dough onto a lightly floured surface. Turn the dough a few times to bring it together into a cohesive ball. Pat and form the dough into an 8-inch diameter circle.
  6. Portion the dough: Using a sharp knife or bench scraper, cut the dough circle into 8 equal triangular wedges. Place the wedges onto a parchment-lined baking sheet.
  7. Chill the dough: Refrigerate the prepared scones for 30 minutes up to 1 hour to allow them to chill and firm up for better texture when baked.
  8. Preheat oven and prepare glaze: Preheat your oven to 400°F (204°C). Prepare the egg wash by whisking 1 large egg with 1 tablespoon heavy whipping cream.
  9. Apply egg wash and bake: Remove the scones from the fridge and brush the tops with the egg wash. Optionally, sprinkle the tops with turbinado sugar for additional crunch and sweetness. Bake the scones for 20 to 25 minutes until the tops are golden brown and a toothpick inserted comes out clean.
  10. Cool the scones: Transfer the baked scones onto a wire rack and allow them to cool completely before glazing.
  11. Prepare coffee glaze: In a small bowl, whisk together sifted powdered sugar, instant espresso powder, brewed coffee or espresso, and milk or cream until smooth and pourable. Adjust the consistency by adding more milk or cream if necessary.
  12. Glaze the scones: Drizzle the prepared coffee glaze generously over the cooled scones to finish. Let the glaze set for a few minutes before serving.

Notes

  • Use cold butter and cold heavy cream to achieve flaky, tender scones.
  • Do not overmix the dough to avoid tough scones.
  • Chilling the dough is important as it helps the scones hold their shape while baking and develops a better texture.
  • If you don’t have instant espresso powder, you can substitute with instant coffee granules but flavor will be slightly milder.
