Ingredients
Fudge Base
- 1/2 cup light corn syrup
- 1/3 cup evaporated milk

- 3/4 cup powdered sugar

Cookie Mix-in
- 1 and 1/2 cups crushed crunchy chocolate chip cookies (such as Chips Ahoy!), divided
Instructions
- Combine Syrup and Milk: In a microwave-safe 2-quart bowl, mix the light corn syrup and evaporated milk together until well-blended to start the fudge base.
- Microwave Chocolate Mixture: Microwave the mixture on HIGH power for 3 minutes. After heating, stir in the semi-sweet chocolate chips until they are fully melted and smooth.
- Add Sugar and Vanilla: Mix in the powdered sugar and pure vanilla extract. Then, beat the mixture vigorously with a wooden spoon for 1 to 2 minutes until the fudge mixture becomes thick and glossy.
- Reserve Cookie Crumbs: Set aside 1/4 cup of the crushed chocolate chip cookies to use for topping later.
- Mix in Remaining Cookies and Spread: Fold the remaining crushed cookies into the chocolate fudge mixture. Spread this evenly into an 8-inch square pan that has been lined with parchment paper. Press the reserved crushed cookies firmly into the top of the fudge to add extra crunch and decoration.
- Chill Until Firm: Cover the pan and chill in the refrigerator for 2 hours or until the fudge is set and firm. Once chilled, lift the fudge out using the parchment paper and cut into squares for serving.
