Ingredients

Fudge Base

  • 1/2 cup light corn syrup
  • 1/3 cup evaporated milk
  • 3 cups semi-sweet chocolate chips
  • 3/4 cup powdered sugar
  • 2 teaspoons pure vanilla extract

Cookie Mix-in

  • 1 and 1/2 cups crushed crunchy chocolate chip cookies (such as Chips Ahoy!), divided


Instructions

  1. Combine Syrup and Milk: In a microwave-safe 2-quart bowl, mix the light corn syrup and evaporated milk together until well-blended to start the fudge base.
  2. Microwave Chocolate Mixture: Microwave the mixture on HIGH power for 3 minutes. After heating, stir in the semi-sweet chocolate chips until they are fully melted and smooth.
  3. Add Sugar and Vanilla: Mix in the powdered sugar and pure vanilla extract. Then, beat the mixture vigorously with a wooden spoon for 1 to 2 minutes until the fudge mixture becomes thick and glossy.
  4. Reserve Cookie Crumbs: Set aside 1/4 cup of the crushed chocolate chip cookies to use for topping later.
  5. Mix in Remaining Cookies and Spread: Fold the remaining crushed cookies into the chocolate fudge mixture. Spread this evenly into an 8-inch square pan that has been lined with parchment paper. Press the reserved crushed cookies firmly into the top of the fudge to add extra crunch and decoration.
  6. Chill Until Firm: Cover the pan and chill in the refrigerator for 2 hours or until the fudge is set and firm. Once chilled, lift the fudge out using the parchment paper and cut into squares for serving.
