Instructions
- Mix Wet Ingredients: In a large mixing bowl, combine the milk, avocado oil, maple syrup, and vanilla extract. Stir well to combine.
- Add Eggs: Whisk in the 2 large eggs until the mixture is smooth and well incorporated.
- Combine Dry Ingredients: Add the whole wheat pastry flour, baking powder, cinnamon, and salt to the wet ingredients. Stir gently until just combined. Some lumps are okay to ensure waffles remain fluffy.
- Fold in Chocolate Chips: Stir in the mini chocolate chips evenly throughout the batter. Set the batter aside to rest for about 5 minutes to allow it to thicken slightly.
- Preheat Waffle Iron: While the batter rests, preheat your waffle maker according to the manufacturer’s instructions.
- Cook Waffles: Once preheated, lightly spray the waffle iron with nonstick cooking spray. Pour approximately ½ cup of batter per waffle well. Cook the waffles for about 4 minutes or until golden brown and cooked through, following your waffle maker’s instructions.
