Description

Ingredients

Wet Ingredients

  • 1 ½ cups milk of choice (almond milk recommended)
  • ⅓ cup avocado oil
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 2 large eggs

Dry Ingredients

  • 2 cups whole wheat pastry flour (or half all-purpose and half whole wheat flour)
  • 1 tbsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt

  • ¾ cup mini chocolate chips


Instructions

  1. Mix Wet Ingredients: In a large mixing bowl, combine the milk, avocado oil, maple syrup, and vanilla extract. Stir well to combine.
  2. Add Eggs: Whisk in the 2 large eggs until the mixture is smooth and well incorporated.
  3. Combine Dry Ingredients: Add the whole wheat pastry flour, baking powder, cinnamon, and salt to the wet ingredients. Stir gently until just combined. Some lumps are okay to ensure waffles remain fluffy.
  4. Fold in Chocolate Chips: Stir in the mini chocolate chips evenly throughout the batter. Set the batter aside to rest for about 5 minutes to allow it to thicken slightly.
  5. Preheat Waffle Iron: While the batter rests, preheat your waffle maker according to the manufacturer’s instructions.
  6. Cook Waffles: Once preheated, lightly spray the waffle iron with nonstick cooking spray. Pour approximately ½ cup of batter per waffle well. Cook the waffles for about 4 minutes or until golden brown and cooked through, following your waffle maker’s instructions.
