Ingredients
Dry Ingredients
- 2 1/2 cups old-fashioned rolled oats
- 1/4 cup unsweetened cocoa powder
- 1/4 cup light brown sugar, packed
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
Wet Ingredients
- 1/3 cup coconut oil, melted
- 1/3 cup pure maple syrup
- 1 1/2 teaspoon vanilla extract
Instructions
- Preheat and prepare: Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper to prevent sticking and for easy cleaning.
- Mix ingredients: In a medium bowl, whisk together the melted coconut oil, cocoa powder, pure maple syrup, brown sugar, vanilla extract, and salt until smooth and well combined. Add the rolled oats and stir thoroughly until all oats are evenly coated with the chocolate mixture.
- Spread granola: Transfer the oat mixture onto the prepared baking sheet. Spread it out evenly and press down gently with a spatula to compact the mixture slightly for better clumps.
- Bake: Place the baking sheet in the oven and bake for 10 minutes. Remove and stir the granola to ensure even baking, then bake for an additional 5 to 10 minutes. For chunkier granola, avoid stirring after the first 10 minutes and add a couple of extra minutes to the total baking time.
- Cool and add chocolate chips: Remove the granola from the oven and let it cool on the baking sheet for 10 minutes. Sprinkle the semi-sweet chocolate chips evenly over the warm granola and allow the entire mixture to cool completely, about 45 minutes, so the chocolate melts slightly and the granola crisps up.
Notes
- For chunkier granola clusters, do not stir after the first baking period and add extra baking time as noted.
- You can substitute semi-sweet chocolate chips with dark chocolate or dairy-free chips to adjust sweetness and dietary preferences.
- Store cooled granola in an airtight container at room temperature for up to two weeks.
- Customize by adding nuts, seeds, or dried fruits after baking if desired.
- Use parchment paper to avoid sticking and facilitate cleanup.
