Description

These Chocolate Covered Strawberry Cheesecake Jars with Cottage Cheese offer a creamy, protein-packed twist on classic cheesecake. Combining fresh and freeze-dried strawberries with a rich chocolate crust and topping, this no-bake dessert is both delicious and easy to prepare. Perfect for a quick treat or elegant dessert, these jars balance fruity tang with smooth chocolate goodness.

Ingredients

Cheesecake Layer

  • 1¼ cups cottage cheese (Good Culture recommended)
  • ½ cup Greek yogurt (Fage 5% for creamiest texture)
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup freeze-dried strawberries (optional but highly encouraged)

Chocolate Crust

  • ½ cup Simple Mills Chocolate Thins, crushed (can substitute Oreos with filling removed)

Chocolate Topping

  • ⅓ cup chocolate chips
  • 1 tsp coconut oil (for smoother melting)

Instructions

  1. Blend Cheesecake Layer: Add cottage cheese, Greek yogurt, maple syrup, vanilla, and fresh strawberries to a food processor. Blend for about 45 seconds until smooth and creamy.
  2. Add Freeze-Dried Strawberries: Add freeze-dried strawberries and pulse just until combined to maintain some texture in the mixture. Transfer to refrigerator to chill.
  3. Prepare Chocolate Crust: Crush chocolate cookies (Simple Mills Chocolate Thins or Oreos) into fine crumbs using a blender or food processor.
  4. Melt Chocolate Topping: In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals. Stir between intervals until smooth and fully melted.
  5. Assemble Jars: Layer the jars starting with chocolate crust, then add the strawberry cheesecake mixture. Spoon melted chocolate on top.
  6. Chill to Set: Refrigerate the assembled jars for 10 minutes to allow the layers to firm up.
  7. Optional Garnish: Finish with whipped cream and a fresh strawberry on top, if desired, before serving.

Notes

  • Using full-fat Greek yogurt provides a creamier texture and more authentic cheesecake feel.
  • Simple Mills Chocolate Thins offer a great crust base; alternatively, Oreos without filling provide a classic dessert flavor.
  • This recipe can be easily doubled to serve more guests or to prep desserts ahead of time.
