Description

This Chocolate Strawberry Shortcake is a delightful twist on the classic dessert, featuring rich chocolate buttermilk biscuits layered with sweet, macerated fresh strawberries and fluffy homemade whipped cream. Perfect for a quick, impressive treat that serves six.

Ingredients

Strawberries

  • 1 pint fresh strawberries
  • 2 Tablespoons granulated sugar

Whipped Cream

  • 1 cup heavy whipping cream
  • 2 Tablespoons confectioners’ sugar

Biscuits

  • 6 chocolate buttermilk biscuits

Instructions

  1. Prep the strawberries. Wash and dry the strawberries thoroughly. Remove the hulls from the strawberries and slice them as desired to your preferred thickness.
  2. Macerate the strawberries. Place the sliced strawberries into a bowl and sprinkle evenly with granulated sugar. Stir gently to coat the strawberries with sugar. Let them sit for about 30 minutes until juices begin to pool in the bowl, enhancing their natural sweetness.
  3. Make the whipped cream. In a large bowl or the bowl of a stand mixer, add the heavy whipping cream and confectioners’ sugar. Using a handheld electric mixer, beat the mixture on medium-high speed until stiff peaks form, indicating the cream is perfectly whipped and ready.
  4. Assemble the strawberry shortcakes. Slice each chocolate buttermilk biscuit horizontally in half. Place the bottom halves on serving plates, then spoon a generous portion of the strawberries onto each biscuit, avoiding excess juice. Top the strawberries with a heaping spoonful of the whipped cream. Finally, crown each with the biscuit tops and serve immediately for best texture and flavor.

Notes

  • For best results, use fresh, ripe strawberries as they provide sweetness and juiciness without additional sugar.
  • Chocolate buttermilk biscuits can be purchased pre-made or homemade for extra flavor.
  • Whip the cream just until stiff peaks form to avoid over-whipping which can cause the cream to separate.
  • The dessert is best served immediately to keep biscuits from becoming soggy.
  • To add a decorative touch, garnish with a whole strawberry or a light dusting of confectioners’ sugar.
