- 1 Tablespoon (14ml) vanilla extract
- 2 large eggs (room temperature)
- 1 3.4 ounce bag regular baked crunchy apple chips (roughly chopped)
Cream Cheese Frosting
- 1 cup (227g) full-fat cream cheese (room temperature)
- 1/2 cup (113g) unsalted butter (room temperature)
- 4 and 1/2 cups (513g) confectioners’ sugar (sifted)
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 2 Tablespoons (28ml) whole milk
- 1 teaspoon ground cinnamon
- 1/4 cup (82g) apple butter
Instructions
- Preheat and Prepare Baking Sheets: Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper and set them aside for baking the cookies.
- Mix Dry Ingredients: In a medium bowl, combine the all-purpose flour, rolled oats, ground cinnamon, baking soda, salt, ground ginger, all-spice, and nutmeg. Set this mixture aside until needed.
- Brown the Butter: In a large saucepan over medium heat, melt the unsalted butter. Keep stirring frequently with a wooden spoon until the butter turns a light golden brown and emits a nutty aroma, with tiny golden specks forming at the bottom of the pan.
- Combine Browned Butter and Sugar: Remove the browned butter from heat and scrape all the butter and browned bits into a large mixing bowl. Whisk in the dark brown sugar vigorously for about 3 minutes until well combined.
- Add Molasses, Apple Butter, and Vanilla: Stir in the molasses, apple butter, and vanilla extract, beating the mixture for another minute until smooth and uniformly blended.
- Incorporate Eggs: Whisk in the eggs one at a time, making sure each egg is fully mixed into the batter before adding the next.
- Fold in Dry Ingredients and Apple Chips: Using a rubber spatula, fold in half of the dry ingredients gently until combined. Then add the rest along with the roughly chopped apple chips, mixing just until everything is evenly blended. Scrape the sides and bottom of the bowl thoroughly to ensure uniformity.
- Scoop Dough onto Baking Sheets: Without chilling the dough, use a large spring-loaded scoop (about 3 tablespoons or 70 grams per scoop) to drop portions onto the prepared baking sheets. Space cookies 2 inches apart to allow for spreading.
- Bake Cookies: Bake one tray at a time for 11 minutes until the cookies have spread and are lightly golden brown.
- Shape Cookies: Immediately after baking, use a spatula to gently press any overly spread edges to shape perfectly round cookies.
- Cool Cookies: Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack. Turn the cookies over so the flat side is facing up, ready for filling.
