Ingredients
Egg Mixture
- 2 large egg whites

Vegetable Filling
- 1 tablespoon oil (from sun dried tomatoes)

- 1/4 cup feta cheese
- 1 10-inch whole wheat flour tortilla
Instructions
- Prepare the Egg Mixture: Whisk the egg whites and optional egg yolk in a small bowl until fully combined. Set this aside for later use.
- Heat the Oil: Place a large skillet over medium heat and add one tablespoon of oil from the sun dried tomatoes. Allow the oil to heat up before adding any ingredients.
- Sauté Spinach: Add the chopped spinach to the hot skillet and sauté for 2-3 minutes until wilted and tender, stirring occasionally.
- Add Tomatoes and Seasonings: Mix in the chopped sun dried tomatoes, minced garlic, salt, and pepper with the spinach. Continue sautéing for another minute to blend flavors.
- Form Veggie Circle: Using your spatula, shape the sautéed spinach and tomato mixture into a circular shape approximately 10 inches in diameter directly in the skillet.
