Ingredients

Egg Mixture

  • 2 large egg whites
  • 1 egg yolk (optional)

Vegetable Filling

  • 1 tablespoon oil (from sun dried tomatoes)
  • 1 cup chopped spinach (packed)
  • 1/3 cup sun dried tomatoes soaked in oil (chopped)
  • 1 tablespoon minced garlic
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon Italian seasoning

Cheese & Wrap

  • 1/4 cup feta cheese
  • 1 10-inch whole wheat flour tortilla


Instructions

  1. Prepare the Egg Mixture: Whisk the egg whites and optional egg yolk in a small bowl until fully combined. Set this aside for later use.
  2. Heat the Oil: Place a large skillet over medium heat and add one tablespoon of oil from the sun dried tomatoes. Allow the oil to heat up before adding any ingredients.
  3. Sauté Spinach: Add the chopped spinach to the hot skillet and sauté for 2-3 minutes until wilted and tender, stirring occasionally.
  4. Add Tomatoes and Seasonings: Mix in the chopped sun dried tomatoes, minced garlic, salt, and pepper with the spinach. Continue sautéing for another minute to blend flavors.
  5. Form Veggie Circle: Using your spatula, shape the sautéed spinach and tomato mixture into a circular shape approximately 10 inches in diameter directly in the skillet.
  6. Pour Egg Mixture: Carefully pour the whisked eggs evenly over the vegetable circle in the skillet. Use a spatula to maintain the circular shape as much as possible.
  7. Season with Italian Spices: Sprinkle one teaspoon of Italian seasoning evenly over the eggs to enhance the flavor.
