This Taco Bell Power Bowl copycat recipe combines tender grilled strip steak, warm Mexican red rice, black beans, fresh vegetables, and a creamy avocado ranch dressing to recreate the popular fast-food favorite at home. Ready in just 25 minutes, it’s a satisfying and flavorful meal perfect for lunch or dinner.

Ingredients

Base Ingredients

  • 1 cup Mexican red rice (prepared)
  • 1/2 cup black beans (rinsed and drained)

Steak

  • 3 ounces strip steak (cooked and chopped)
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper

Toppings

  • 1/4 cup cheddar cheese (shredded, about 1 ounce)
  • 1/2 cup romaine lettuce (chopped)
  • 1/8 cup diced tomatoes
  • 2 tablespoons guacamole
  • 2 tablespoons sour cream

Avocado Ranch Dressing

  • 1/2 cup sour cream
  • 1/2 cup water
  • 2 tablespoons buttermilk powder
  • 1 ripe avocado (pitted, peeled, and chopped)
  • 1 teaspoon lemon juice
  • 1/4 fresh jalapeño (chopped)
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon fresh ground black pepper
  • 1 tablespoon chives or green onion (chopped)

Instructions

  1. Prepare Steak: Heat a grill pan or cast iron skillet over medium-high heat. Rub the strip steak with olive oil, then season with kosher salt and black pepper. Cook it for 2 to 3 minutes per side until well browned and cooked to desired doneness, typically well done.
  2. Rest and Slice: Remove the steak from heat and allow it to rest for 10 minutes. Then cut it into bite-sized pieces for easy eating.
  3. Make Dressing: In a blender or food processor, combine sour cream, water, buttermilk powder, ripe avocado, lemon juice, chopped jalapeño, garlic salt, black pepper, and chives or green onions. Blend until the mixture is smooth and creamy.
  4. Warm Base: Heat Mexican red rice and black beans either in the microwave or on the stovetop until thoroughly warmed.
  5. Build Bowl: Spoon the warm red rice into a bowl. Add the black beans and sprinkle the shredded cheddar cheese on top.
  6. Add Veggies: Arrange chopped romaine lettuce and diced tomatoes in sections over the rice and beans. Drizzle a few tablespoons of the prepared avocado ranch dressing over the vegetables.
  7. Add Steak and Toppings: Add the chopped, cooked steak on top. Then add guacamole and sour cream as toppings to finish off the bowl.
  8. Serve: Serve the power bowl immediately while everything is warm and fresh for the best flavor and texture experience.

Notes

  • For added spice, increase the amount of jalapeño in the dressing.
  • Mexican red rice can be prepared ahead or purchased pre-made to save time.
  • Adjust steak doneness to preference; traditionally cooked well done in this recipe.
  • Use fresh lime juice instead of lemon juice if preferred for a slightly different citrus note.
  • The avocado ranch dressing can be made in advance and refrigerated for up to 2 days.
