Description

Delicious and healthy Cottage Cheese Almond Flour Waffles that are gluten-free, packed with protein, and perfect for a wholesome breakfast or brunch. These waffles are moist, crisp, and lightly sweetened with maple syrup, making them a guilt-free indulgence for the whole family.

Ingredients

Wet Ingredients

  • 1 cup cottage cheese
  • 3/4 cup milk
  • 2 eggs
  • 2 tablespoons light olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups almond flour (224g)
  • 1/3 cup gluten-free flour (50g)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions

  1. Blend Wet Ingredients: Add 1 cup cottage cheese, 1/2 cup milk, 2 eggs, 2 tablespoons light olive oil, 2 tablespoons maple syrup, and 1 teaspoon vanilla extract to a blender or food processor. Blend until completely smooth and the cottage cheese curdles have disappeared, usually about 15-30 seconds.
  2. Add Dry Ingredients: Add 2 cups almond flour, 1/3 cup gluten-free flour, 2 teaspoons baking powder, and 1/4 teaspoon salt to the blender. Pulse just until all ingredients are incorporated and the batter is thick and smooth. Be careful not to overmix to avoid tough waffles.
  3. Preheat Waffle Maker: Preheat your waffle maker according to the manufacturer’s instructions to ensure it is hot and ready for cooking.
  4. Cook Waffles: Pour the batter onto the hot waffle iron, adjusting the amount depending on your waffle maker size. Cook according to your machine’s settings until the waffles are golden brown and crispy.
  5. Cool and Serve: Let the waffles cool slightly to allow the texture to set perfectly before serving. Enjoy them warm for best flavor and texture.

Notes

  • Ensure not to overblend cottage cheese to maintain smoothness without lumps.
  • Use gluten-free flour to keep the recipe gluten-free; regular flour can be substituted if gluten is not an issue.
  • Let waffles cool slightly before serving to crisp up perfectly.
  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer storage.
  • Reheat waffles in a toaster or oven to retain crispiness.
