Cake Batter

  • 3/4 cup 4% cottage cheese
  • 1 Tablespoon vanilla extract
  • 2 large eggs
  • 2 Tablespoons milk of choice
  • 1 1/2 cups all-purpose flour (spooned and leveled)
  • 2 teaspoons baking powder
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/2 cup packed dark or light brown sugar
  • 1/4 cup avocado oil


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and prepare an 8”x8” square baking pan by greasing it with cooking spray. Optionally line the pan with parchment paper, leaving an overhang to make removal of the cake easier.
  2. Mix Streusel: In a large mixing bowl, combine all the streusel ingredients: flour, rolled oats, almond flour, salt, brown sugar, cinnamon, and unsalted butter. Use a fork or your fingers to mix until a clumpy mixture forms. Set this aside for topping later.
  3. Whisk Dry Ingredients: For the cake batter, whisk together the all-purpose flour, baking powder, cinnamon, salt, and brown sugar in a large bowl until well mixed.
  4. Blend Cottage Cheese: In a high-speed blender, blend the cottage cheese and vanilla extract for 30 to 60 seconds until the mixture is smooth and creamy without lumps.
  5. Whisk Wet Ingredients: Pour the blended cottage cheese mixture over the dry ingredients. Add the eggs, avocado oil, and milk. Whisk gently until you get a smooth, thick batter. Be careful not to overmix to maintain tenderness.
