- 3/4 teaspoon cinnamon
- 1/4 teaspoon fine sea salt

- 1/4 cup avocado oil
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and prepare an 8”x8” square baking pan by greasing it with cooking spray. Optionally line the pan with parchment paper, leaving an overhang to make removal of the cake easier.
- Mix Streusel: In a large mixing bowl, combine all the streusel ingredients: flour, rolled oats, almond flour, salt, brown sugar, cinnamon, and unsalted butter. Use a fork or your fingers to mix until a clumpy mixture forms. Set this aside for topping later.
- Whisk Dry Ingredients: For the cake batter, whisk together the all-purpose flour, baking powder, cinnamon, salt, and brown sugar in a large bowl until well mixed.
- Blend Cottage Cheese: In a high-speed blender, blend the cottage cheese and vanilla extract for 30 to 60 seconds until the mixture is smooth and creamy without lumps.
