  • 1½ cups whole cranberries (fresh or frozen)

White Chocolate Glaze

  • 2 oz white chocolate (chopped)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ cup heavy whipping cream (plus 1 additional teaspoon as needed)
  • Pistachios (finely chopped, for garnish)


Instructions

  1. Prepare the Pan: Preheat the oven to 350℉. Grease and line a 9×5 inch loaf pan with parchment paper, leaving overhangs perpendicular to the long side for easy removal.
  2. Mash Bananas: Mash the bananas using a fork, leaving some small chunks for texture. Combine with sour cream and vanilla extract in a bowl and set aside.
  3. Cream Butter and Sugars: In a separate large bowl, cream together the unsalted butter, light brown sugar, and granulated sugar until light and fluffy, about 2 to 3 minutes.
  4. Add Eggs and Banana Mixture: Add eggs one at a time to the creamed butter and sugar, mixing until incorporated. Then mix in the banana, sour cream, and vanilla mixture thoroughly.
  5. Mix Dry Ingredients: Whisk together the all-purpose flour, baking soda, kosher salt, and ground cinnamon in another bowl.
