Description

This Cranberry Brie Bubble Bread is a delightful combination of soft, buttery dough, creamy Brie cheese, tart whole-berry cranberry sauce, and a crunchy, sweet pecan coating. Perfect for holiday entertaining or a cozy snack, this pull-apart bread is baked until golden and bubbly, offering an irresistible mix of flavors and textures.

Ingredients

Dough

  • 3 cups all-purpose flour
  • 1 package (¼ ounce) rapid-rise active dry yeast
  • 1 teaspoon salt
  • 1 cup warm water (120°F)
  • 2 tablespoons butter, melted

Topping and Filling

  • ¼ cup butter, melted
  • ¾ cup finely chopped pecans or walnuts
  • ¼ cup packed brown sugar
  • ¼ teaspoon coarse salt
  • 1 package (7 ounces) Brie cheese, cut into ¼-inch cubes
  • 1 cup whole-berry cranberry sauce

Instructions

  1. Mix Dough: In the bowl of a stand mixer fitted with a dough hook, combine the all-purpose flour, rapid-rise active dry yeast, and salt.
  2. Add Liquids: Pour in warm water (120°F) and 2 tablespoons of melted butter. Mix until a rough dough forms.
  3. Knead Dough: Knead the dough on low speed for 5–7 minutes until it becomes smooth and elastic.
  4. First Rise: Shape the dough into a ball, place it in a greased bowl, turning once to coat the surface. Cover and let it rise in a warm place for 45 minutes or until it doubles in size.
  5. Prepare Baking Dish: Grease a 2-quart ovenproof baking dish and set aside.
  6. Prepare Topping Mixture: In a shallow bowl, combine finely chopped pecans or walnuts, brown sugar, and coarse salt. Place the remaining melted butter in another shallow bowl.
  7. Shape Dough Balls: Turn the risen dough out onto a lightly floured surface and stretch into a 9×6-inch rectangle. Cut the dough into 1-inch pieces and roll each piece into a ball.
  8. Coat Dough Balls: Dip each dough ball into the melted butter, then roll it in the nut, sugar, and salt mixture to coat evenly.
  9. Layer in Dish: Place the coated dough balls into the prepared baking dish, layering them with cubes of Brie cheese and spoonfuls of whole-berry cranberry sauce.
  10. Second Rise: Cover the baking dish and let the dough balls rise again for about 45 minutes or until puffy.
  11. Preheat Oven: Preheat your oven to 350°F (175°C).
  12. Bake Bread: Bake the assembled bread for 30 minutes or until the bread is golden brown and the Brie and cranberry filling is bubbly.
  13. Cool and Serve: Remove from the oven and cool on a wire rack for 15–20 minutes. Serve the bread warm for best flavor and texture.

Notes

  • Use rapid-rise yeast for faster rising times, or regular active dry yeast but adjust rise times accordingly.
  • Make sure the water is warm but not hot to avoid killing the yeast.
  • You can substitute walnuts for pecans depending on preference or availability.
  • Serve this bread warm to enjoy the melted Brie and gooey cranberry combination.
  • This recipe is great for holiday gatherings or brunch.
