Ingredients
For the Pasta
- 1/2 pound dry Fettuccine
- Salt (for boiling water)
For the Avocado Sauce
- 1 large very ripe avocado, pitted
- 1 tablespoon extra virgin olive oil
- 1 teaspoon freshly squeezed lemon juice
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
For Serving
- 1 cup sliced cherry tomatoes
- Extra Parmesan cheese, for topping
Instructions
- Boil Pasta: Bring a large pot of salted water to a rolling boil. Add the dry fettuccine and cook until al dente according to package instructions, usually about 10 to 12 minutes. Do not drain the water; reserve some of the pasta cooking water for the sauce.
- Prepare Avocado Sauce: While pasta cooks, place the avocado halves, extra virgin olive oil, lemon juice, Parmesan cheese, salt, and pepper into a blender. Pulse briefly to combine all ingredients.
- Create Creamy Sauce: Slowly stream in about 1/2 to 3/4 cup of the reserved hot pasta water while blending until the sauce becomes smooth and creamy. Taste the sauce and adjust seasoning with additional salt and pepper if needed.
- Combine Pasta and Sauce: Toss the cooked fettuccine directly into the blender or a large bowl with the avocado sauce ensuring the pasta is evenly coated.
- Serve: Plate the coated pasta and top generously with sliced cherry tomatoes and extra Parmesan cheese. Serve immediately for best flavor and texture.

- The avocado must be very ripe for a smooth, creamy sauce.
- Reserve pasta cooking water carefully as it helps loosen the sauce and makes it silky.
