Ingredients

For the Pasta

  • 1/2 pound dry Fettuccine
  • Salt (for boiling water)

For the Avocado Sauce

  • 1 large very ripe avocado, pitted
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon freshly squeezed lemon juice
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

For Serving

  • 1 cup sliced cherry tomatoes
  • Extra Parmesan cheese, for topping


Instructions

  1. Boil Pasta: Bring a large pot of salted water to a rolling boil. Add the dry fettuccine and cook until al dente according to package instructions, usually about 10 to 12 minutes. Do not drain the water; reserve some of the pasta cooking water for the sauce.
  2. Prepare Avocado Sauce: While pasta cooks, place the avocado halves, extra virgin olive oil, lemon juice, Parmesan cheese, salt, and pepper into a blender. Pulse briefly to combine all ingredients.
  3. Create Creamy Sauce: Slowly stream in about 1/2 to 3/4 cup of the reserved hot pasta water while blending until the sauce becomes smooth and creamy. Taste the sauce and adjust seasoning with additional salt and pepper if needed.
  4. Combine Pasta and Sauce: Toss the cooked fettuccine directly into the blender or a large bowl with the avocado sauce ensuring the pasta is evenly coated.
  5. Serve: Plate the coated pasta and top generously with sliced cherry tomatoes and extra Parmesan cheese. Serve immediately for best flavor and texture.

Notes

  • The avocado must be very ripe for a smooth, creamy sauce.
  • Reserve pasta cooking water carefully as it helps loosen the sauce and makes it silky.
  • If you don’t have a blender, you can mash the avocado by hand and whisk in the other ingredients, adding pasta water gradually.
