Description

This Creamy Garlic Chicken Over Rice recipe features tender, juicy chicken breasts cooked in a garlic-infused sauce served over fluffy white rice, enriched with fresh spinach and Parmesan cheese. A comforting, flavorful dish that comes together in just 30 minutes, perfect for a quick weeknight dinner.

Ingredients

Chicken and Seasonings

  • 1 pound boneless, skinless chicken breasts, cubed
  • ¾ teaspoon garlic salt
  • ¼ teaspoon ground black pepper
  • 4 cloves garlic, minced

Rice and Broth

  • 1 cup dry white rice
  • 3 cups low-sodium chicken broth

Cream and Vegetables

  • ½ cup heavy cream
  • 2 cups fresh spinach
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Season the Chicken: Season the cubed chicken breasts with garlic salt and ground black pepper to infuse flavor.
  2. Cook the Chicken: Spray a large skillet with oil and cook the chicken over medium-high heat for 5-7 minutes until golden brown and cooked through.
  3. Sauté the Garlic: Add the minced garlic to the skillet and sauté for 1 minute until fragrant, being careful not to burn it.
  4. Add Rice and Broth: Stir in the dry white rice and pour in the low-sodium chicken broth.
  5. Boil and Simmer: Bring the mixture to a boil, then cover and reduce heat to simmer for 12-15 minutes until most of the liquid is absorbed and rice is tender.
  6. Stir in Cream and Spinach: Add the heavy cream and fresh spinach to the skillet, stir to combine, then cover and cook another 5-7 minutes until the spinach wilts and the cream is absorbed.
  7. Finish and Serve: Stir in the freshly grated Parmesan cheese until melted and evenly distributed, then serve hot.

Notes

  • You can substitute fresh baby spinach with frozen spinach if fresh is unavailable; just make sure to thaw and drain excess water.
  • For a lighter version, use half-and-half or milk instead of heavy cream, but the sauce will be less rich.
  • Make sure to use low-sodium chicken broth to control the saltiness of the dish.
  • To prevent the rice from sticking, avoid lifting the lid during the simmering process.
  • Adjust garlic salt according to your taste preference or substitute with regular salt and extra garlic powder if desired.
