Ingredients
Chicken and Seasonings
- 1 pound boneless, skinless chicken breasts, cubed
- ¾ teaspoon garlic salt
- ¼ teaspoon ground black pepper
- 4 cloves garlic, minced
Rice and Broth
- 1 cup dry white rice
- 3 cups low-sodium chicken broth
Cream and Vegetables
- ½ cup heavy cream
- 2 cups fresh spinach
- ¼ cup freshly grated Parmesan cheese
Instructions
- Season the Chicken: Season the cubed chicken breasts with garlic salt and ground black pepper to infuse flavor.
- Cook the Chicken: Spray a large skillet with oil and cook the chicken over medium-high heat for 5-7 minutes until golden brown and cooked through.
- Sauté the Garlic: Add the minced garlic to the skillet and sauté for 1 minute until fragrant, being careful not to burn it.
- Add Rice and Broth: Stir in the dry white rice and pour in the low-sodium chicken broth.
- Boil and Simmer: Bring the mixture to a boil, then cover and reduce heat to simmer for 12-15 minutes until most of the liquid is absorbed and rice is tender.
- Stir in Cream and Spinach: Add the heavy cream and fresh spinach to the skillet, stir to combine, then cover and cook another 5-7 minutes until the spinach wilts and the cream is absorbed.
- Finish and Serve: Stir in the freshly grated Parmesan cheese until melted and evenly distributed, then serve hot.
Notes
- You can substitute fresh baby spinach with frozen spinach if fresh is unavailable; just make sure to thaw and drain excess water.
- For a lighter version, use half-and-half or milk instead of heavy cream, but the sauce will be less rich.
- Make sure to use low-sodium chicken broth to control the saltiness of the dish.
- To prevent the rice from sticking, avoid lifting the lid during the simmering process.
- Adjust garlic salt according to your taste preference or substitute with regular salt and extra garlic powder if desired.
