Ingredients
Sausage Mixture
- 1 pound breakfast sausage
- ½ cup onion, diced
- ½ cup red bell pepper, diced
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
Casserole Base
- 8 ounces crescent roll sheet
- 1 cup shredded cheddar cheese, divided
Egg Mixture
- 10 large eggs
- ¾ cup half-and-half
- ½ teaspoon salt
- ½ teaspoon pepper
Garnish (Optional)
- 2 tablespoons sliced green onion
Instructions
- Preheat and Prepare Dish: Preheat your oven to 400°F and grease a 9×13-inch casserole dish using non-stick cooking spray or oil to prevent sticking.
- Cook Sausage: In a large skillet over medium heat, add the breakfast sausage and cook for 3-4 minutes, breaking it apart as it cooks to ensure crumbling.
- Add Vegetables: Stir in the diced onion, red bell pepper, and minced garlic; continue cooking for an additional 5 minutes until the sausage is fully cooked and the vegetables soften.
- Mix in Spinach: Remove the skillet from heat and fold in the chopped fresh spinach, stirring well to combine.
- Prepare Crescent Roll Base: Unroll the crescent roll sheet and spread it evenly on the bottom of the greased casserole dish.
- Add Cheese Layer: Sprinkle half a cup of shredded cheddar cheese over the crescent roll base evenly.
- Layer Sausage Mixture: Spoon the cooked sausage and vegetable mixture over the cheese layer and spread evenly across the base.
- Whisk Egg Mixture: In a large bowl, combine the eggs, half-and-half, salt, and pepper. Whisk vigorously until fully blended.
- Pour Egg Mixture: Pour the whisked egg mixture evenly over the sausage mixture in the casserole dish and then sprinkle the remaining half cup of cheddar cheese on top.
- Bake the Casserole: Place the casserole in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Garnish and Serve: Remove the casserole from the oven and garnish with sliced green onion if desired. Let it cool slightly before serving.
Notes
- You can substitute breakfast sausage with turkey sausage for a leaner option.
- Spinach can be replaced with kale or omit for less greens.
- For extra flavor, add chopped mushrooms or bell peppers of different colors.
- Ensure the crescent roll sheet is spread evenly to prevent soggy spots.
- Let the casserole rest for 5-10 minutes after baking for easier slicing.
