Ingredients

Meat and Vegetables

  • 1 pound lean ground beef
  • ½ yellow onion, finely diced
  • 1 small green bell pepper, chopped
  • ¾ cup frozen corn kernels

Seasoning and Flavor

  • ¼ cup salsa
  • 1 (1 ounce) packet taco seasoning (about 2 tablespoons)
  • ½ cup water

Tacos and Cheese

  • 3 cups shredded cheddar cheese
  • 18 4-inch flour tortillas or corn tortillas (or 12 6-inch tortillas)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and place two same-sized rimmed baking sheets inside to heat. Cut two pieces of parchment paper to fit the baking sheets for easy transfer and cleanup.
  2. Cook Ground Beef and Onions: In a medium skillet over medium-high heat, cook the ground beef with the finely diced onion, breaking up the meat with a spoon, until the beef is no longer pink, about 5 to 7 minutes. Drain excess fat to keep the mixture lean.
  3. Add Vegetables and Seasoning: Stir in the chopped green bell pepper, frozen corn, salsa, taco seasoning, and ½ cup water. Let the mixture simmer over medium heat until it thickens and flavors meld, about 5 minutes.
  4. Warm Corn Tortillas (if used): If using corn tortillas, wrap them in a damp paper towel and microwave for 20 to 30 seconds to make them more pliable and easier to fold without cracking.
  5. Prepare Tacos: Brush one side of each tortilla lightly with olive oil, then flip so the oiled side is down on a clean surface. Spoon the beef mixture and shredded cheddar cheese evenly onto one half of each tortilla, then fold the other half over to form a taco.
