  2. Add Dry Ingredients: Mix in 1 cup of panko breadcrumbs, 1 cup of shredded Parmesan cheese, and 2 tablespoons of chopped parsley evenly into the chicken mixture.
  3. Form Patties: Pour the remaining 1 1/2 cups panko breadcrumbs onto a shallow plate. Using an ice cream scoop, portion the chicken mixture into patties. Coat each patty thoroughly on all sides with bread crumbs, adding more crumbs as necessary to ensure a full coating.
  4. Prepare for Frying: Arrange the coated patties in a single layer on a parchment paper-lined baking sheet. Start with patties about 3/4-inch thick, which will be pressed down to 1/2-inch thick during frying.
