Ingredients
Salad Ingredients
- 2 large English cucumbers (cut into 1/2-inch cubes)
- 12 ounces grape or cherry tomatoes (halved or quartered)
- ¾ medium red onion (thinly sliced)
- 8 ounces feta cheese (crumbled)
Vinaigrette Dressing
- ½ cup extra-virgin olive oil
- ¼ cup red wine vinegar
- 4 garlic cloves (minced)
- 1 tablespoon Dijon mustard
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon fresh dill (chopped)
- ½ tablespoon honey
- 1 teaspoon salt
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic and herb seasoning
- ½ teaspoon freshly ground black pepper
Instructions
- Combine Vegetables: In a large bowl, add the cubed cucumbers, halved or quartered tomatoes, and thinly sliced red onions. Toss gently to mix the fresh ingredients evenly.
- Prepare Vinaigrette: In a medium bowl, whisk together the extra-virgin olive oil, red wine vinegar, minced garlic, Dijon mustard, lemon juice, fresh dill, honey, salt, Italian seasoning, garlic and herb seasoning, and freshly ground black pepper until well emulsified.
- Toss Salad with Dressing: Pour the prepared vinaigrette over the vegetable mixture. Toss gently to coat everything evenly with the dressing.
- Add Feta Cheese: Gently stir in the crumbled feta cheese, mixing carefully to avoid breaking up the cheese too much. Serve the salad chilled for the best flavor and freshness.
Notes
- For best results, chill the salad for 10-15 minutes before serving to allow flavors to meld.
- If you prefer a less tangy dressing, reduce the amount of red wine vinegar and lemon juice slightly.
- This salad can be kept refrigerated in an airtight container for up to 2 days; add feta just before serving to maintain texture.
- Fresh dill can be substituted with fresh parsley or basil for different flavor profiles.
- Adjust salt and pepper according to taste, especially if your feta cheese is very salty.
