Vinaigrette Dressing

  • ½ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • 4 garlic cloves (minced)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon fresh dill (chopped)
  • ½ tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic and herb seasoning
  • ½ teaspoon freshly ground black pepper


Instructions

  1. Combine Vegetables: In a large bowl, add the cubed cucumbers, halved or quartered tomatoes, and thinly sliced red onions. Toss gently to mix the fresh ingredients evenly.
  2. Prepare Vinaigrette: In a medium bowl, whisk together the extra-virgin olive oil, red wine vinegar, minced garlic, Dijon mustard, lemon juice, fresh dill, honey, salt, Italian seasoning, garlic and herb seasoning, and freshly ground black pepper until well emulsified.
  3. Toss Salad with Dressing: Pour the prepared vinaigrette over the vegetable mixture. Toss gently to coat everything evenly with the dressing.
  4. Add Feta Cheese: Gently stir in the crumbled feta cheese, mixing carefully to avoid breaking up the cheese too much. Serve the salad chilled for the best flavor and freshness.
