Description

Delight in these simple and delicious Dark Chocolate Clusters made with roasted almonds coated in rich, semi-sweet Lily’s Sweets baking chips and finished with a sprinkle of sea salt. Perfect as a snack or a sweet treat, these clusters come together quickly with minimal ingredients and no added oils.

Ingredients

Ingredients

  • 2 cups raw & whole almonds
  • 9 oz Lily’s Sweets Semi-sweet Baking Chips
  • Sea salt, for sprinkling

Instructions

  1. Roast the almonds: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper and spread the raw almonds in an even layer. Bake for 5 minutes, gently stir to ensure even roasting, then bake an additional 5-6 minutes until the almonds are toasted and fragrant. Remove from oven and set aside to cool. Skip this step if you already have roasted almonds.
  2. Melt the chocolate: Place the Lily’s Sweets Semi-sweet Baking Chips in a double boiler or set a heatproof bowl over a pot of simmering water on the stove. Keep the heat low and stir the chocolate continuously until fully melted and smooth. The melted chocolate will be thick since no oil is added.
  3. Combine and form clusters: Remove the melted chocolate from heat and add the roasted almonds. Stir well to coat each almond evenly in chocolate.
  4. Shape the clusters: Using a cookie scoop or spoon, drop chocolate-coated almonds onto a baking sheet lined with parchment paper, spacing them apart. Sprinkle a pinch of sea salt on top of each cluster.
  5. Set the clusters: Let the clusters sit at room temperature until the chocolate hardens completely. Alternatively, place them in the refrigerator to speed up the setting process. Once solid, they are ready to be enjoyed.

Notes

  • For an extra crunch, roast almonds thoroughly but avoid burning.
  • You can substitute almonds with other nuts like pecans or walnuts.
  • Adjust sea salt quantity to taste for a perfect sweet-salty balance.
  • Store the clusters in an airtight container at room temperature or in the fridge.
  • If you prefer a smoother texture, you can add a teaspoon of coconut oil when melting chocolate.
