Instructions

  1. Prepare the Pan: Line a loaf pan with parchment paper. Cut a second piece of parchment paper slightly longer than the pan’s bottom; you will use this to help smash the dates evenly.
  2. Remove Date Pits: Carefully slice a pocket into each date to remove the pit, ensuring the dates remain intact enough to press into bars.
  3. Smash Dates: Arrange pitted dates in a single layer in the loaf pan. Place the second parchment sheet over the dates and, using the bottom of a cup, press down firmly to create an even, compressed layer of dates.
  4. Add Nut Butter: Drizzle or spread the nut butter evenly over the smashed dates layer.
  5. Sprinkle Peanuts: Evenly scatter the crushed raw peanuts on top of the nut butter layer for added crunch.
  6. Melt Chocolate: Combine the dark chocolate and coconut oil in a microwave-safe bowl. Melt in 30-second increments on High, stirring between each, until smooth. Alternatively, melt using a double boiler on the stovetop.
  7. Coat Bars with Chocolate: Drizzle the melted chocolate mixture over the peanuts, then spread evenly with a spatula to cover the entire surface.
  8. Freeze to Set: Place the pan into the freezer for at least 1 hour to allow the bars to firm up completely.
