Ingredients

Dry Ingredients

  • 2 1/2 cups old fashioned oats, divided
  • 1/4 cup flaxseed
  • 2 tablespoons chia seeds
  • 2 teaspoons pumpkin spice
  • 1/4 cup mini chocolate chips (more if desired)

Wet Ingredients

  • 1 cup peanut butter
  • 1/4 cup canned pumpkin
  • 1/2 cup honey
  • 1 teaspoon vanilla extract


Instructions

  1. Blend oats: Place 1 cup of the old fashioned oats into a blender and pulse until they break into smaller pieces, but not so much that they become a fine flour. This helps create a better texture for the protein balls.
  2. Mix ingredients: In a medium-sized mixing bowl, combine the 1 cup of pulsed oats with the remaining 1 1/2 cups of whole oats. Add the peanut butter, canned pumpkin, honey, vanilla extract, flaxseed, chia seeds, pumpkin spice, and mini chocolate chips. Optionally, add protein powder to increase protein content. Mix all ingredients thoroughly until well combined.
  3. Scoop: Using a mini cookie scoop, portion out the mixture into small balls and place them onto a baking sheet lined with parchment paper or a casserole dish.
  4. Chill: Refrigerate the scooped balls for a short period to help them firm up and hold their shape before freezing or longer chilling.
