Instructions
- Prep your tools: Preheat your oven to 350℉ (175℃) and lightly grease a 9×13 inch baking dish with cooking spray like PAM to prevent sticking.
- Cook the meat: In a large skillet over medium heat, add the ground beef and diced onion. Stir and break the meat into pieces using a wooden spoon. Cook until the beef is browned and the onions are softened. Drain excess fat from the skillet.
- Add flavorings: Stir in the minced garlic and cook for 1 minute, stirring constantly to prevent burning. Add the taco seasoning and salsa, reduce heat to medium-low, and stir well to combine. Cook for about 2 minutes until flavors meld.
- Make the meat mixture: Remove the skillet from heat, then stir in the cream of chicken soup and sour cream thoroughly until the mixture is creamy and well blended.
- Assemble the casserole: Spread one-third of the crushed Doritos evenly across the bottom of the prepared baking dish. Layer half of the meat mixture over the chips, then sprinkle one-third of the shredded cheese on top. Repeat with a second layer of chips, meat, and cheese. Finish with a final layer of chips and the remaining cheese.
- Bake: Cover the casserole loosely with aluminum foil and bake for 30 minutes in the preheated oven. Remove the foil and continue baking for an additional 10 to 15 minutes until the cheese is fully melted and bubbly.
- Finish and serve: Take the casserole out of the oven and allow it to rest for 5 to 10 minutes to set. Garnish with diced tomatoes, chopped green onions, fresh cilantro, or any desired taco toppings before serving.
